Healthy Gut Breakfast

Base Mixture

1 cup cooked and cooled brown rice

½ cup steel cut oats

2 tblspn chia seeds

1 ½  cups low fat yoghurt

1 ½  cups low fat milk (any sort: cow’s, almond, rice etc)

 

Additions

Perfect Pineapple

2 tblspn honey

2 tblspn dry roasted unpeeled almonds, chopped roughly

2 tsp shredded coconut

½  cup diced pineapple

 

OR

Blueberry Lemon Bliss

2 tblpsn 100% fruit blueberry jam (I use St Dalfour or Dick Smith jams)

½ tspn grated lemon rind

¼ tspn vanilla extract

½  cup blueberries, fresh or frozen

Instructions

Combine ingredients from the base recipe and add the ingredients from one of the additives list. Mix well and refrigerate overnight. The recipe makes about 7 serves. It will keep for up to a week in the fridge. Serve in a bowl with a little milk.
